Für die moderne Küche ist Aceto Balsamico die Modena IGP nahezu unentbehrlich geworden. Als Dressing für Salat und Gemüse rechnet man pro Person einen Teelöffel, gemischt im Verhältnis 1:3 mit Olivenöl. Sehr raffiniert sind Dessertzubereitungen mit Aceto Balsamico: Aromatischen, frischen Erdbeeren gibt der edle Essig eine interessante Note. Auch zu Vanilleeis oder gesüßtem Mascarpone passen einige Tropfen gut, und mit dem Aroma von Haselnüssen oder Haselnussöl verbindet es sich einfach einmalig.
