Wheat is probably the most important and best-known type of grain in the world. The gluten-containing protein in the endosperm gives it exceptionally good baking properties. Wheat is an excellent bread grain and is therefore ideal for baking bread and rolls. But it is also a valuable ingredient for cakes and biscuits, soups and casseroles.
Preparation

Soak 125g of wheat in plenty of water for about 10 hours. Bring to the boil in twice the amount of fresh, lightly salted water and simmer for 45-50 minutes on a low heat.
